Abstract: The Cooking Well, Exploring Cultures (CWEC) program developed by Texas A&M AgriLife Extension is a four-lesson series that aims to educate the audience on multiple facets of nutrition and give exposure to international cuisines. Students enrolled in the Introduction to Health Promotion and Education course were provided with the opportunity to participate in an experiential learning activity. They utilized curriculum, background research, knowledge, and skills to conduct peer-led cooking demonstrations under the supervision of their professor and county extension agent. Using a validated questionnaire developed by AgrliLife, paired t-tests were used to assess improved learning regarding many lifestyle behaviors and skills. Data collected from the surveys were analyzed at the Texas A&M Extension Service Office of Data and Accountability. Through the presentation, we will demonstrate the utility of embedding experiential learning activity in a course and student learning in multiple domains that could not be achieved through the traditional didactic methods.

Dr. Subi Gandhi

Dr. Subi Gandhi is an Associate Professor of Public Health at Tarleton State University and currently serves as the Assistant Director at the Rural Communication Institute. In addition to representing Tarleton at many local, state, regional, national, and international public health organizations, she is an avid researcher with an extensive background in epidemiology and rural population health.

Andrea Brooks

Andrea Brooks is the County Extension Agent-Family and Community Health for Erath County. She has served as a Family and Community Health agent in two counties (formerly in Eastland County), for a combined number of 7 years, and provides health education to her community, with an emphasis in the fields of nutrition, food safety, active lifestyles, financial literacy and resource management, and healthy aging.
